Homemade Nachos grande (No onion/No garlic )


Preparation time: 15 mins, Cooking time: 30 mins

Recipe Ingredients:

Tomato salsa:

  • 3 finely chopped tomatoes
  • 1 large green capsicum finely chopped
  • 1 tbsp jain ketchup
  • Salt to taste
  • 1 tsp sugar
  • 3 basil leaves
  • 1 tbsp coriander leaves chopped
  • 1 tbsp green chillies chopped

Filling:

  • 2 cups kidney beans boiled and mashed
  • 1 tbsp salsa sauce
  • Salt to taste
  • 1 tbsp chilli flakes
  • 1 tsp pepper

Nachos preparation:

  • 2 cup maize flour
  • 1 cup all purpose flour
  • 1 tsp carom seeds
  • 1 tsp Salt
  • 1 tbsp oil
  • Water
  • Oil for Deep frying

Toppings:

  • 1 cup olive and jalapeno rings
  • 1 cup finely chopped green capsicum
  • 1 cup sweet corn kennels
  • 1 cup grated processed cheese
  • 1 tsp Oregano

1 tsp chilli flakes

Recipe Preparation:

SALSA SAUCE:

  1. In a frying pan add oil, chopped tomatoes, capsicum, ketchup, salt, sugar and saute for 2 mins
  2. Add basil leaves, coriander leaves and saute for 1 min and remove from heat, keep aside

FILLING PREPARATION:

  1. In a nonstick pan, add oil, salsa we made and cook for 2 mins
  2. Now add boiled and mashed kidney beans, chilli flakes, salt, pepper and mix it well. Cook for 5 more mins. Remove from heat and keep aside.

NACHOS PREPARATION:

  1. In a mixing bowl, add maize flour, all propose flour, salt, carom seeds, oil and mix it! Add water and knead it to make tight dough.
  2. Now roll it out and cut triangles from it.
  3. Deep fry them.

SERVING:

  1. In a large plate first place few nachos ( I put 8-9 pieces), spread filling of kidney beans, spread salsa sauce, sprinkle olives, jalapenos, corn kernels and chopped capsicum.
  2. Repeat the same step 2 more times
  3. Now on top, garnish it with lots of cheese, olives, jalapenos, oregano and chilli flakes
  4. Ready to serve!
