Apple strudel (egg free) using homemade puff pastry sheet 

Apple strudel(German:Apfelstrudel;Czech:trdl) is a traditional Viennese strudel, a popular pastry in Austria and in many countries in Europe that once belonged to the Austro-Hungarian empire! I have made this pastries without egg and it turned out really awesome, my kitchen was really smelling great with cinnamon fragrance! Again this have made using homemade puff pastry sheet, you don’t need to get that from shops! You could serve this in dessert hot with scoop of chilled ice cream!

Preparation time: 22 mins, cooking time: 40 mins


Serves 4 People

Puff pastry dough:
  • 1 cup all purpose flour
  • 1 tbsp castor sugar
  • Pinch of saffron
  • 1 tsp grounded cinnamon
  • 1 tbsp Butter
  • 1/2 cup water
  • Pinch of salt
For stuffing:
  • 3 tbsp mix fruit jam
  • 2 medium sized apples chopped in cubes
  • 2 tbsp fresh bread crumbs
  • 1 tsp grounded cinnamon
  • 2 tbsp castor sugar
  • 1/2 cup roughly chopped dry fruits of your choice( I used walnuts, almonds)
  • 1/2 cup raisins ( I used black one) socked for 10 mins in a water
Other Ingredients:
  • 1/2 cup melted butter
  • 1 tbsp ground cinnamon and sugar mixture



Puff pastry sheet preparation:
  1. First in a bowl, soak saffron with castor sugar and grounded cinnamon in a water. And rest for 5 mins.
  2. In a mixing bowl, add all purpose flour, salt, butter and mix it well.
  3. Now pour saffron mixture into flour and knead it well by adding required water to make tight dough.
  4. Now wrap it into butter paper and refrigerate it for 20 mins.
  5. Then roll it out very thin and cut big square sheet from it. Keep aside.
  6. Stuffing preparation:
  7. In a bowl, add dry fruits along with bread crumbs, castor sugar as grounded cinnamon and mix it well. Keep aside.
Pastries preparation:
  1. Now apply the mix fruit jam on center of the sheet and place the chopped apples on it.
  2. Now sprinkle the stuffing and socked raisins on it.
  3. Now apply the melted butter on other one side of sheet and fold it inside over the apple stuffing.
  4. Fold other side as well and press gently.
  5. Press gently top and bottom part as well to sill it properly.
  6. Apply the butter on it and put the vertical cuts on it.
  7. Preheat the microwave at 190 degrees and bake this apple strudel for 40 mins.
  8. Once baked, cut them and serve it with scoop of ice cream!
